One of the best moves I ever made was saying hi to the big guy with a cowboy hat at Taste of the Nation a few months back.  The Washington Post's David Haegerdorn has recently written an article on lamb featuring Border Springs and Craig Rogers.  He called Craig and told him that Border Springs & Dino would be a perfect fit.  And we are. 

Craig raises Kathadin and Texel sheep on his farm in Patrick Spring's Virginia.  These lambs have outstanding flavor from their 100% grass fed diet and super careful handling.  No antibiotics or growth stimulants are used.  On out menu, we offer lamb shanks and lamb tongue, but there is no better way to offer lamb than by buying a whole lamb.  So for tonight's dinner, we are doing just that!  This way, we can offer an array of flavors, textures & cuts that we cannot do on our regular menu.  This is a tasting menu of 10 very small courses that will add up to quite the meal.  The cost of the dinner is $60 plus tax & gratuity.  Since all this lamb calls for good wine, you can choose a flight of 2 Rosso di Montalcino and 2 Brunello di Montalcino for $35.
